Ditch the eggs and switch up your regular breakfast with this fruity berry smoothie bowl from Ashley, our Marketing Coordinator!

  • Are there any lessons you've picked up from cooking that you think can be applied to the work you do? 
    Ashley: There is something very traditional about the framework for marketing and I feel like the same thing can be said for the foundation of a recipe. People create recipes in anticipation of others seeing it, finding it tempting enough to make and sharing it with others in hopes of them enjoying it as well. In marketing, you’re anticipating the needs of others (your customers) in hopes of them engaging in a little retail therapy.

  • Do you have any memories attached to this recipe? / What does this meal remind you of?
    Ashley: If you know me, you know that this is a dish that I genuinely love eating and can eat at any given time. It’s just so quick and easy and the fact that you can switch up the toppings makes it feel like a different dish each time!

  • What new recipes are you looking to try during this time?
    Ashley
    : Honestly, this is probably the most I’ve ever cooked. I’ve been cooking a lot of new recipes and recently made a Cuban-inspired roast pork dish. I’m excited to continue experimenting!

  • What is your favorite meal of the day?
    Ashley
    : Lunch is my absolute favorite because I feel like there are no rules!

  • Is there a Yummie piece that makes you feel your best while cooking?
    Ashley
    : I can’t seem to get myself to wear anything else aside from the Mel Biker Short, Audrey Bralette and big t-shirt. I think it may be time to order the short in bulk!

 

Recipe:

  • 1 heaping cup frozen berry mix
  • 2/3 cup vanilla almond milk
  • 1/4 cup chia seeds  
  • fresh strawberries
  • fresh blueberries
  • granola
  • shredded coconut 

 

Combine frozen berries and almond milk in a blender and blend well (I don't use a lot of milk because I like my base very thick). Put into bowl and mix in chia seeds. Assemble your bowl with all your favorite toppings and enjoy!

This recipe is really fun because the possibilities are endless. I personally like a simple base because I like to have fun with my toppings but you can really do what you want! I don't have any measurements for the toppings because I kind of just throw how much of what I want in the bowl depending on how I'm feeling that day but I am always heavy handed with the granola because I love the crunch!
