Are there any lessons you've picked up from cooking that you think can be applied to the work you do?
Karen: My job in logistics requires the handling of getting our product from our suppliers to our customers. It entails great teamwork and the ability to handle unforeseen problems that may arise. Sometimes in cooking we face obstacles as well; did I overcook it? Will it be done on time? Is it enough for everyone? Will they like it? We at Yummie strive for our final product to be something all will love and want to share with others, just like the Cream Puff Cake.

Do you have any memories attached to this recipe? What does this meal remind you of?
Karen: This dessert always brings me back to my PTA days at my children’s school. I got the recipe there and it has proved to be a family favorite since then. My oldest son will not celebrate a birthday without it, and now his 5 children are joining in on his love for this. I make it constantly and it can be altered for many occasions. Add Strawberries, blueberries, sprinkles, M&M’s, shaved chocolate, or whatever you like for the topping. It can be enjoyed in so many different ways!
What new recipes are you looking to try during this time?
Karen: I am always looking for crowd pleasers because I come from a large Italian family and there is always a crowd. I find that I most enjoy items that can be made ahead of time like casseroles, but ones that are unique and not always the same ingredients. Lately I have given my meals a Mexican flair and all seem to be approving it.
What is your favorite meal of the day?
Karen: My favorite meal of the day is dinner. I enjoy when we can all finally relax, sit and enjoy each other’s company without having to rush off somewhere.
Is there a Yummie piece that makes you feel your best while cooking?
Karen: I love our lounge wear for it fit and comfort. My go to outfit is our Slub Knit Wide Leg Pant and matching Cap Sleeve Tee. The material is light and flowing and you never feel constricted in it.
- 1 cup water
- 1 cup flour
- 1 stick butter
- 4 eggs
Boil water and butter. Turn off and while hot add flour mixing well. Let cool for 3 minutes and then beat in eggs one at a time. Pour into GREASED 9x13pan, bringing up edges. Bake for 25 minutes. Let cool then add filling and toppings.
- 2 large vanilla instant pudding
- 3 1/2 cups milk
- 1 8oz. softened cream cheese
Mix all together and add on top of cooled crust that will flatten. Refrigerate for 1 hour before serving. Finish off with cool whip and chocolate topping.
